
Blueberry Bread Pudding
3 cups milk (I combined 2 cups of almond milk with 1 cup of buttermilk) 3 organic, cage-free, humanely raised eggs (do good, taste good)
1 cup organic sugar (I buy this in bulk to save $$, fill my canisters right in the store) 1/2 tsp organic vanilla 1/2 tsp organic lemon zest 6 cups torn-up bread 2 cups blueberries (so so SO glad I froze 90% of my Sauvie Island harvest!) 3 Tbsp powdered sugar
Preheat oven to 350 and grease a glass casserole dish. Whisk milk -> lemon zest. Tear up the bread and put in a bowl, then cover with the milk mixture, stirring well to coat. Let it soak 10-15 minutes. Combine berries and sugar, then stir into bread mixture. Pour into casserole dish and bake one hour.
Luscious, baby, I say, luscious. Eat it with a big glass of milk and be happy.
