Camarones al Ajillo

my annual splurge…my best attempt at replicating camarones al ajillo, which i fell in love with back in barra de potosi, feet in the sand, waves lapping nearby, cold beer & lime in my hand…

  • 1 lb big beautiful uncooked georgia shrimp (none of that cheap grocery store crap – the good stuff makes all the difference)

  • 1 head organic garlic, minced

  • 10 serrano peppers, split/seeded/chopped (you Will regret it if you don’t seed these babies…or forget to wear gloves!)

  • 2 limes, juiced

  • sea salt

  • pepper

  • 3 tbsp olive oil

  • 3 tbsp neutral oil (grapeseed, sunflower)

mix juice, salt, pepper and toss shrimp in it.  let it sit 5-10 minutes. saute garlic in oils for a few minutes, then add serranos and saute another minute, then add the shrimp.  saute til it’s pink & perfect!
