Step One: Grab a Zipcar and head to Sauvie Island Farms. Pick a lotta peaches, like 50+ pounds worth (oh, and like forty thousand blueberries, too).
Step Two: Turn your kitchen into a disaster area trying to blanch, peel, cut, can (with only a teensy amount of sugar because really, peaches don’t need heavy syrup, they’re sweet enough as it is!) and process them. Forgive yourself for your horrendous slicing techniques as well as for the extensive amount of “peach mush” created, and save it to puree for smoothies and peach leather (which, in my opinion, needs no sweeteners!)
Step Three: Admire your work…at 3AM (because you wisely didn’t start the process til 8PM after staring at the peaches all day hoping they’d can themselves).
